
You need to make this Tangy Lemon bars as a weekend treat. They are very lemony so you want to make sure to put the powder sugar on top of the bars to give them a little extra sweetness. Enjoy!!
Ingredients
1 3/4 cups All Purpose Flour
1 cup Powdered Sugar
1 tablespoon Cornstarch
1/2 cup Butter, softened
3 large Eggs
1 1/2 cups Sugar
2 Lemons
Instructions
Preheat oven to 350F and line an 8×8″ square baking pan with parchment paper overhanging the sides
Combine 1 1/4 cups flour, 1/2 cup powdered sugar, and 1 tablespoon cornstarch together in a bowl or mixer.
Cut in the 1/2 cup softened butter using a fork, pastry cutter or food processor or mixer until the mixture resembles coarse meal.
Dump the mixture into the prepared pan. Spread it out evenly then press with fingers firmly into an even layer. Bake for 10 minutes or just until the edges start to brown.
While baking, whisk together 3 eggs, 1 1/2 cups sugar, zest of 1 lemon, and 1/2 cup lemon juice(about 2 lemons) in a mixer.
Slowly add in the flour, have the mixer high enough to prevent any lumps.
Pour over hot crust and bake for another 25-30 minutes or until the lemon filling is set.
Let stand at room temperature to cool for an hour and chill in the refrigerator for 2 hours. Then take out and pull out of pan using sides of parchment. Dust with powdered sugar before slicing and serving. Cut into 9 squares or 12 bars. I also Dust with powder sugar right before serving because the powder sugar absorbs into the bars.
Keep any leftovers in the fridge for up to a week in an airtight container or freeze for up to a month.
