
I am so ready for some fall weather!! Even though it is still in the 90’s here I couldn’t resist making some yummy soup. I make a big batch and freeze some of it for quick grab and heat lunch. This soup is so simple to make and it has V-8 so its healthy right??? Maybe if we all start making cool weather foods the weather will catch on.
V-8 Soup Recipe
2 large jars of V-8 (I use the regular you can also use 1 spicy)
1 bag frozen corn
1 bag frozen vegetable mix (corn, beans and carrots)
1 bag frozen lima beans or peas(your pick I do Lima beans)
1 1/2 to 2 pounds ground beef (just depends if you want it beefy I use 2)
2 Tsp Nature Seasoning Spice may add more for taste at end
In a large soup pot brown your beef. Once browned add natures seasoning and stir. Add all frozen vegetables and stir and let cook for 1 min. Add 1 jar of V-8. If doing spicy and regular add half of each. Let simmer on low/med adding more V-8 as needed. Do a taste test and add more natures seasoning as needed until desired salty tastiness is reached. I add more v-8 as needed and when I store it as I do like it soup like. Enjoy!!
