This recipe will become one of your favorites. It is so yummy and pretty easy. It does have a few steps, not hard ones, but worth it in the end. Enjoy.

Chicken Pot Pie Soup
Ingredients
2 cups cooked chicken cubed (I used boiled chicken breast but you could use a rotisserie chicken)
2 medium potatoes peeled and cubed
3 tablespoons butter
2-3 tablespoons flour
1 small yellow onion finely chopped
4 celery ribs chopped
10 ounces frozen peas
3 carrots chopped
1 1/2 cups heavy cream
4 cups water
2 1/2 tablespoons chicken base (better than bouillon found it at Walmart)
4 teaspoons Montreal Steak Seasoning(I could not find this in the store so I used Natures Seasoning)
Bring a large pot of water to a boil, once boiling add potatoes. and cook until slightly tender. Strain and set aside
In a large soup pot, over a med heat, add butter and melt then add the carrots, cook for 1-2 mins add onion and celery and 2 teaspoons of seasoning cook until onions are translucent.
Add water and chicken base and bring to a boil.
Lower heat to med and cook for about 15 mins.
In a jar with a lid add 1/2 cup of the cream with the flour shake well until no lumps and pour into soup pot.
Add the remainder of the cream to the pot
Add frozen peas, potatoes and chicken
season with salt and pepper to taste and add additional seasoning.
Let simmer for 30 mins until starts to thicken
I added more seasoning per my taste at the end so make sure you taste it.
Turn off heat and let sit for about 10 mins and serve
Feel free to add more cream/water to make thinner or to make more soup if you wish
Good for left overs also.
