The Masters Pimento Cheese Recipe…

Another great recipe to make for the Super Bowl. The Masters Pimento Cheese is a heavily guarded secret with people taking it to the grave but after a few years of trying out different recipes this one seems to hit the nail on head. You can serve it as sandwiches or I put it in a serving bowl on a tray and surround it with white bread cut into halves or crustless quarters, crackers, celery sticks and jalapenos cut in half and seeded. I am sure this will be a hit and also can be good for your carb friendly guests. Enjoy!!

The Masters Pimento Cheese Recipe

This makes enough for about 6 sandwiches

12 ounces processed yellow American cheese(I use Kraft singles) chopped like it is grated

12 ounces Swiss cheese grated

4 ounces pimentos drained and chopped(save some of the liquid)

4 heaping tablespoons of Mayonnaise(Hellman’s or BluePlate)

2 dash hot sauce like tabasco or whatever your favorite is

2 tablespoons heavy cream or for the consistency you like

salt and pepper to taste this is optional

In a bowl combine all of the above including some of the pimento juice and stir, combing everything well. If it is to thick and not easy to spread add a bit more cream or mayo your choice, I do cream. Then chill for at least 2 hours to allow flavors to come together and serve.

Some of the recipes I have seen say to put in a food processor and shred cheese and then add everything into processor and you will have a smooth consistency like peanut butter. I prefer the bowl and spoon method.

Serve with regular good old soft white bread, crackers or veggies. I also like to stuff jalapenos halves with it. Also great to make a grilled cheese with or put onto of a burger!!
