
Made this quick and easy Lemon pie for a friends Birthday surprise. I am not a big crust maker so I cheated and used a store bought crust. You can chose to make your own, recipe below, or buy one. Make sure to use real lemons and not out of a bottle, makes all the difference in the world. Enjoy!! It will be gone fast…

Pie Crust:
16 graham crackers
1/4 cup sugar
1/8 tsp salt
1/2 cup butter, melted
Preheat the oven to 325F.
In a food processor, pulse the graham crackers, granulated sugar, and 1/8 of the salt until it is fine crumbs, about 30 seconds.
Add the melted butter and pulse to combine. Pour the crumbs into a pie dish.
Using the bottom of a measuring cup, press the mixture into the bottom and up the sides of the pie dish.
Bake 15 minutes or until the crust is golden.
Let cool for 20 minutes

Pie filling:
2 (14-ounce) cans of sweetened condensed milk
4 egg yolks
3/4 cup lemon juice, fresh squeezed
Zest of one lemon 🍋
1/8 tsp salt
Turn up the oven temperature to 375F.
In a mixer or large bowl, whisk the condensed milk and egg yolks until smooth. Add the lemon juice, zest and the salt and whisk until combined.
Pour into the cooled crust.
Bake about 20 minutes or until the edges are set and the center is somewhat jiggly.
Let cool for 15 minutes and then Refrigerate until set, about 3 hours.

Whipped Cream Topping:
1 1/2 cups heavy cream
2 tbls powdered sugar (or more or less depending on how sweet you like it)
Zest of one lemon 🍋 for decorating the top
In a mixer, beat the heavy cream and powdered sugar until stiff peaks form.
Spread the whipped cream over the cold pie and top with the zest of the lemon.
Refrigerate until serving.
