Cloud Eggs Recipe



These are so good and very impressive! When you serve them you will look like a gourmet cook and only you will know how easy they were to make. One tip: even if the yolk looks a little raw it is more done than you think so watch your time depending on how runny you want the yolk. I like mine cooked but runny. Enjoy!!!

Cloud Eggs

Makes 4 servings

Total Time 20 mins

8 large eggs

1 cup grated Parmesan

½ pound deli ham, chopped (I used honey ham)

course salt

ground black pepper

chopped chives or parsley for garnish(tomatoes are also great chopped and thrown on top of egg)

Preheat oven to 450 degrees

Spray  a large baking sheet with spray(I used Trader Joes coconut oil spray)

Separate egg whites and yolks

Beat egg whites until stiff about 3 mins

Gently fold in chopped ham and parmesan

Spoon egg whites into 8 mounds on baking sheet make a nest large enough to hold egg yolk

Season with salt and pepper

Bake for 3 mins until they start to become lightly golden

Take out of oven

Put 1 yolk in each nest(carefully)

Bake until yolks re set about 3 mins

Take out of oven and Garnish and serve

  1. I need to try this. I tried to make those poached eggs in the microwave. FAIL! Lol don’t do it. I followed the instructions and it still exploded in the microwave and over cooked the yolk.
